Banana muffins


INGREDIENTS:

  • 2 cups of flour
  • 2 teaspoons of cinnamon
  • 1/2 teaspoon of baking powder
  • 1/4 teaspoon of sodium bicarbonate
  • 1/2 cup of mashed banana
  • 1 egg, beaten
  • 3/4 cup of buttermilk
  • 140g of diced apple



DIRECTIONS:
Preheat the oven to 200°C. Lightly grease a muffin pan. Sift the flour, cinnamon, baking powder and sodium bicarbonate into a large bowl. Add sugar and stir until it's well combined. Put the banana, egg and buttermilk into a jug. Whisk with a fork to combine. Add banana mixture and apple to dry ingredients and mix until it's all well combined. Put the mixture into a prepared muffin pan. Bake for 12 to 15 minutes. Allow it to cool a bit for 5 minutes before placing it onto a wire rack. Serve the muffins while they're still warm. Enjoy :)
