Mexican soup


INGREDIENTS

  • 2 tablespoons of vegetable oil 
  • 1 onion, chopped 
  • 2 cloves of garlic 
  • 1 chipotle
  • 1 tablespoon of chili powder
  • 2 teaspoons of salt 
  • 6 cups of chicken broth 
  • 1 cup of corn kernels
  • 1 tomato, chopped 
  • 1 cup of shredded, cooked chicken 
  • 1/2 cilantro leave 
  • 1/4 cup of squeezed lime juice 


DIRECTIONS:

Heat the oil in the saucepan. Add the onion, garlic, chipotle, chili powder, salt and cook for about 5 minutes. Add the chicken broth and cook for 10 minutes. Next, add corn and cook for 5 minutes more. Take the saucepan from the heat and stir in the tomato, chicken, cilantro and lime juice. Serve with tortilla chips.
