1.Beetroot crisps with coriander houmous
Ingredients:
- 250 g large beetroot
- 3 sprigs of fresh thyme
- olive oil
- 2 cloves of garlic
- 1 x 400g tin of chickpeas
- 50 g coriander leaves
- 2 tablespoons tahini
- 1 lemon
- 1 tesapoon smoked paprika
- extra virgin olive oil
2. Tuna & caper butter
Ingredients:
- 2 anchovies, from sustainable sources
- 1 teaspoon capers
- 2 x 185 g tins of tuna in olive oil
- 210 g butter
3. Backed sole goujons
Ingredients:
- olive oil
- 450 g lemon sole fillets , skinned, from sustainable sources
- 50 g plain flour
- 2 large free-range eggs
- 1 tablespoons sweet smoked paprika
- 2 large handfuls breadcrumbs
