BANANA BREAD

BANANA BREAD




THE INGREDIENTS


  • 1/2 cup of melted, unsalted butter or vegetable oil, plus some more for the greasing pan,
  • 1 and 3/4 cups of all-purpose flour,
  • 1 cup of toasted pecans (chopped), 
  • 1/2 cup of sugar, 
  • 1 teaspoon of baking soda,
  • 1 teaspoon of cinnamon,
  • 1/4 teaspoon of freshly grated nutmeg,
  • 2 large eggs, 
  • 1/4 cup of buttermilk, sour cream or yoghurt,
  • 1/2 cup of brown sugar,
  • 1 teaspoon of vanilla extract, 
  • 4 soft, very ripe, medium bananas



DOUGH

The bananas peel and mash into a  puree. 
Whisk together the dairy and eggs, then add the mashed banana and dry ingredients. Lumps are fine. Pour the pastry onto the buttered pan and lightly tap the pan  to evenly spread the batter.

Bake in 180°C for about 1 hour in the oven, until it's browned and insert a toothpick into the center of bread. You'll know if it's ready, because if it is, then the toothpick comes out completely clean. Let the bread cool off for 10 minutes in the pan, then turn of the cooker to let it cool completely. Ready, baked dough you can sprinkle with powdered sugar.
