1. Cherry chocolate mousse
Ingredients:
- 200g quality dark chocolate, (70%)
- 1x400g tin of black pitted cherries in syrup
- 200ml double cream
- 4 large free-range eggs
- 2 tablespoons golden caster sugar
It almost taste like heaven, I guarantee!
2. Almon pastry puff
Ingredients:
- 100g blanched almonds
- 1 tablespoon double cream, plus extra to serve
- 75g icing sugar, plus extra for dusting
- 2 large free-range eggs
- 375g block of all-butter puff pastry (cold)
3. Strawberry and cream sandwich sponge
Ingredients:
- 225 g unsalted butter (at room temperature) , plus extra for greasing
- 225 g white caster sugar
- 1 teaspoon vanilla extract
- 4 large free-range eggs
- 225 g self-raising flour
- 1 teaspoon baking powder
- 1 splash of milk
FILING
- 200 ml double cream
- 1 vanilla pod
- half tablespoon of icing sugar, plus extra for dusting
- 250 g fresh strawberries
