2. Asian salmon and sweet potato traybake
Ingredients:
- 1 large sweet potato
- 2 stick of lemongrass
- Piece of ginger
- 2 cloves of garlic
- 1 teaspoon sesame oil
- 150ml organic vegetable stock
- 150ml coconut milk
- 1 lime
- 1 long red chilli
- 4x150g salmon fillets
- low-salt soy sauce (optional)
Fresh asian flavours, this easy salmon traybake can be on the tablein well under an hour.
3.Gorgeous Greek chicken
Ingredients:
- 1 red pepper
- 6 spring onions
- 20g black olives
- 150g ripe cherry tomatoes
- 170g couscous
- Half cucumber
- 2 free-range chicken breasts
- olive oil
- 1 tablespoon dried oregano
- 1 lemon
- 100g fat-free natural yoghurt
- Half bunch of fresh mint
Full of lovely fresh veg and herbs, this couscous salad is delicious served with citrussy Greek-style chicken.
