Zucchini Bread


Ingredients

  • 3 eggs
  • 1 tablespoon of lemon zest
  • 1 cup of oil
  • 2 cups of flour
  • 1 cup of sugar
  • 2 teaspoons of baking soda
  • 1 tablespoon of vanilla
  • 1 teaspoon of baking powder
  • 2 cups of zucchini, shredded


Directions

Preheat the oven to 200°C. In a large bowl beat together eggs, oil, sugar, and vanilla. Slowly add zucchini. Add lemon zest and mix thoroughly. 

In a separate large bowl combine flour, baking powder, salt and cinnamon. Slowly add zucchini mixture until it completely combines. Divide batter into two greased pans. Bake for about 1 hour and 15 minutes, until skewer comes out clean.
