1.Hazelnut Madeleine
Ingredients
- 185 g unsalted butter
- 60 ml double cream
- 1 tablespoon runny honey
- 4 large free-range eggs
- 150 g caster sugar
- 20 g demerara sugar
- 185 g plain flour
- 80 g ground hazelnuts
- 1 heaped teaspoon baking powder
- 400 g double cream
- 60 g icing sugar
- 1 vanilla pod
- 75 ml Frangelico , or other hazelnut liqueur

2. Chocolate ale marshmallows
Ingredients
- vegetable oil , for greasing
- icing sugar
- 240 ml cold pale ale
- 25 g powdered gelatine
- 450 g granulated sugar
- 175 g runny honey
- 2 large free-range egg whites
- 1 tablespoon vanilla extract
- 400 g dark chocolate (70% cocoa solids)
- 8 hard caramel sweets

- 250 g fondant icing sugar
- 300 g raspberries , plus extra to serve
- 3 tablespoons caster sugar
- 1 lemon
- 25 g butter
- 1 large free-range egg
- 3 large free-range egg yolks
- ½ teaspoon vanilla bean paste
- 50 g butter
- 75 ml whole milk
- 100 g plain flour
- 1 teaspoon caster sugar
- 3-4 medium free-range eggs
