Sweets

Hi in this post I’m going to show you my ideas for sweet and cookies.

1.Hazelnut Madeleine

Ingredients

  • 185 g unsalted butter 
  • 60 ml double cream 
  • 1 tablespoon runny honey 
  • 4 large free-range eggs 
  • 150 g caster sugar 
  • 20 g demerara sugar 
  • 185 g plain flour 
  • 80 g ground hazelnuts 
  • 1 heaped teaspoon baking powder 
FRANGELICO CREAM 
  • 400 g double cream
  • 60 g icing sugar 
  • 1 vanilla pod 
  • 75 ml Frangelico , or other hazelnut liqueur


2. Chocolate ale marshmallows 

Ingredients

  • vegetable oil , for greasing 
  • icing sugar 
  • 240 ml cold pale ale 
  • 25 g powdered gelatine 
  • 450 g granulated sugar 
  • 175 g runny honey 
  • 2 large free-range egg whites 
  • 1 tablespoon vanilla extract 
  • 400 g dark chocolate (70% cocoa solids) 
  • 8 hard caramel sweets 

3. Pasion-berry buns 

Ingredients

  • 125 ml double cream 
  • 125 ml Greek yoghurt 
  • 4 large passion fruit 
  • 250 g fondant icing sugar 
RASPBERRY CURD 
  • 300 g raspberries , plus extra to serve 
  • 3 tablespoons caster sugar 
  • 1 lemon 
  • 25 g butter 
  • 1 large free-range egg 
  • 3 large free-range egg yolks 
  • ½ teaspoon vanilla bean paste 
CHOUX PASTRY 
  • 50 g butter 
  • 75 ml whole milk 
  • 100 g plain flour 
  • 1 teaspoon caster sugar 
  • 3-4 medium free-range eggs
