1.Fantastic fish pie
Ingredients:
- 5 large potatoes
- 2 large free-range eggs
- 2 large handfuls of baby spinach
- 1 onion
- 1 carrot
- olive oil
- 250 ml double cream
- mature Cheddar or Parmesan cheese
- 1 lemon
- 1 heaped teaspoon English mustard
- 1 large handful of fresh flat-leaf parsley
- 450 g haddock , or cod fillet, skin off, pin-boned, from sustainable sources
2.Smocked trout, horseradish and new potato salad
Ingredients:
- 800 g new potatoes
- 4 tablespoons crème fraîche , or soured cream
- 2 lemons
- extra virgin olive oil
- 4 heaped tablespoons fresh horseradish , or jarred horseradish
- 1 bunch of fresh flat-leaf parsley , (30g)
- ½ a bunch of fresh chives
- 1 small bunch of spring onions
- 300 g hot-smoked trout , from sustainable sources
3.Thai-style crispy sea bass
Ingredients:
- 4 spring onions
- half a bunch of fresh coriander , (15g)
- 2 x 300 whole sea bass , scaled, gutted, trimmed, from sustainable sources
- 2 tablespoons Thai red curry paste
- 1 lime
